Dacquoise

Japanese Dacquoise got an idea from the original Dacquoise from France. I’ve known that the owner and patissier of Japanese Patisserie 16-ku created Japanese style Dacuoise while he was learning French patisseries in France.

I was not interested in this dry cookies (cake?) until I had the one sold at “Murakami Kaishindo, Kyoyo”. The Dacquoiise is a little crunchy outside and soft inside. The bitter salted butter caramel cream is perfect for the Dacquoise. My image of Dacquoise is totally changed since I had it.

I wanted to try to make the similar one at home, but it wasn’t easy. I tried to bake them couple times, and finally I could make the similar one as Murakami Kaishindo!

Shibukawa-Ni 
Fall is here. I found the chestnuts at the market last Sunday.
Japanese sweet called SHIBUKAWA-NI which is a bit similar to Marron Glace is one of my favorite, but I never tried to make it. I knew it takes many hours, so I hesitate to try when I think about time for making it... I got a bag of chestnuts from the market, and I think about what I should make. I try not to think about time for making, and I started making "Shibukawa-ni."

It took three days to finish, but I am so satisfied with my first "Shibukawa-ni"!
It's SO GOOOOOD! 

Even I ate many while I was making it, I could share some with my friends and can keep three containers for myself. Next time I will add Rum or Whiskey to syrup. It should be nice!

Chewy caramel chocolates & cranberries cookies
I attended my company's training on Wed and Thurs and got really tired. Every time I got stressed I want to bake something sweet :)

I found caramel Velrhona chocolates and dried cranberries in my fridge, and I started baking chewy soft cookies from 10:00PM... it was soooo good, and brought them for my co-worker who may be also tired for the training. I hope they could also get rid of tiredness:)

Anpanman & Snowman  (Icing leftover)
ANPANMAN is the hero in Japanese cartoon. My friend's baby "Sara" likes him a lot and I tried to make it with leftover royal icing.(Please see "Halloween Cookies" in my Kitchen page) The icing was a bit runny, so I needed to wait for an hour until the face(orange part) dried. After the face dried, I added the cheeks and nose. Again, I waited the both were dried enough. Lastly, I drew the eyes, eyebrows and mouth.
The eyebrows are a bit different from the original(it was pretty hard to draw...), but I am mostly satisfied with my job. :) 
There were still leftover icing, and I tried to make snowman,too. First, I drew three round at the same time... The icing was still runny, so all three became one...Gee...

Then, I drew the middle part and wait until it dried, and then drew the head and the bottom part. Rest of the works are the same as Anpanman. I drew the nose and bottons, first. Then, I added the eyes and mouth.
I also made the small snowmans. 

I gave most of them to my friend, and she will use them for the cake her family eats on Christmas Eve. I hope Sara likes the Anpanman!

Tsukiji Fish Market is walking distance of my apartment. Outside of the market, there are many shops. My favorite one is a small store which sells mainly vegetable and few kinds of fruits, and I go there every other week. Last month, I got inexpensive chestnuts at the store and I made puree. 
It was pretty good with bread and pancakes. I used it for Macaron’s filling, too.

Halloween Cookies

I made royal icing cookies for the first time in almost a year. Last year I made them for Christmas, and this year was for Halloween. It should be Jack-o'-lantern, but the icing was a bit thick and hard to spread on cookies. I gave up to decorate them as pumpkin, and I draw a devil’s face instead.


The cats also should be all colored in black for Halloween, but it turned to a pretty cat instead. They doesn’t look like Halloween cookies…
Only ghosts were all colored in white, but the icing couldn’t be spread nicely on a surface.
Anyway, I baked more than 60, and I brought them to my office and give them to my co-workers instead of “trick or treat” candy.

Small White Bread

 I remembered my friend gave me rice flour and I wanted to use them for something. I searched a recipe and found one easy bread recipe. It only needs to rise once after shape into small buns. The recipe was for a breadmaker, so I needed to change the recipe for kneading bread dough by hand a little bit.

It's been a while since I made caramels. Last time I made soft caramels, but I tried to make hard one this time. Nice to give them as a present. :)

 "Cumquat" Mojito-wise Drink
and
Bonito Poke
I saw someone instruduced the ojito with "Cumquat" on the net and I remember my parents house has the Cumquat tree. My father never ate it and he always let them fall on the gound. Last weekend , I was back to my parents house and I saw the tree has Cumquats on the branches. I picked them  from the tree, but it was so tough to collect many...because bees were collecting the honey from the flowers. I was so scared I might got stung by bees. I try not to make them upset, and picked the fruits. I usually don't drink alcholol at home, but I really wanted to make mojito with cumquat. But I didn't followed the recipe, and I made Mojito-wise drink last night. The dinner was bonito poke on the wheat/rice. It was really good even it was the first poke I made.

Crackle Cookies

My first crackle cookie. I added the bitter orange peel I made last month.Some are soft, and some are very crunchy:) I think it did well for the first time to bake. I will bring them to my office tomorrow and bring them back for my father this weekend.

Orange Peel
Orange peel that I made from Dai-dai(bitter orange), and it was brought back from my parents house last time I came back home. It was organically grown, so the peels didn't look good...But it's OK, nobody can see the damaged part after it was cooked :P

Birthday cake & Strawberry Cake
 My aunt brought me the big and sweet strawberries when I got back to my parent house last time. My aunt bought them from the farmer. They are pretty expensive strawberries if I can buy at the department store, and it could be more them 500 yen per each...(There are some types of strawberry which cost at 1500yen per each in Japan...I can' t believe the price...) My aunt bought them from the farmer, so it doesn't cost that much.

I baked the birthday cake with these strawberries for my friend's 30's birthday. I prepared the royal icing flowers & hearts and chocolate couple days before I gave it to her as a birthday present. It was the first time to make the royal icing flowers and do tempering chocolate for me, so it was REALLY difficult... Need a practice!
Anyway, my friend said she enjoyed the cake, and I am so relieved that I could surprised her with this cake :)

I also baked the strawberry cake and invited my friend to my apt for having the coffee with the cake.

I didn't imagine how difficult to make the flowers with royal icing... It looked easy to make it when I saw it on You Tube...Gee. 

Osechi Ryori (New Years Meal)
"Osechi Ryori (お節料理)" is a Japanese traditional cuisine are eaten on New Years. There are many variety of dishes, and each one has a symbolic wish such as longevity, wealth, represents fertility, and happiness. I cooks it every end of year and prepare for the new years. My father only cooks "Kuromame"(Sweet black beans) instead of me, and his cooks are the perfect! It doesn't look fancy at all, but it is the tradition for my family.



French Macarons

These macarons were for my friend's daughter. My friend told me her daughter wants to eat it as many as she can. I hope she enjoyed mty macarons :)



 




Christmas Cookies
Again, I baked the icing cookies for my friends, but the icing was a little bit loose this time. The icing didn't dry easily and it takes two days to dry completely. It doesn't look good compared with the last year...I need a practice!

Flan, it is called " pudding", not flan in Japan. This flans are made by milk, heavy cream, gelatin, egg and sugar. So easy to make, but the taste is soooo gooood! I added rum a little bit this time.

I also added rum into the caramel sauce this time. It will stay fresh for few months in the fridge, so I always make a lot.I want to add my favorite flavor " raspberry" next time. It should be good!

Whoopie Pie
Now you know first marshmallow I made is two days ago, and I could make them without any problem. They were fluffy enough, and the taste was really good. Now it's time to make Whoopie Pie. I wanted to make them as my friend's baby shower present.

First I baked whoopie pies(outer shells). According to the recipe, I could bake 24 pies, but I could make about 40 whoopies. Maybe the size is smaller than the recipe says.
After I baked outer shells, I started to make marshmallow while outer shells were cooling down. This time I added orange marmalade jam and orange essence. Taste is good, but I feel coconut flavor is better than the orange flavor.


 I prepared double amount of ingredients this time. The marshmallow recipe says I can make 18 whoopie pies with marshmallow filling one time, so I thought I should have double amount because of the number of whoopie pies I baked.  I supposed to spread marshmallow filling onto the one side of the whoopie pie, and top with another to make sandwich. But the marshmallow were a bit runny, so I had to wait until it became to easy to handle.  Anyway, even I spreaded marshmallow filling onto all pies, I still had the left over. So, I squeezed them out on the corn starch bed and made the regular marshmallows. While I was concentrated on squeezing marshmallow out from the icing bag,I left the marshmallow on the one side of the whoopie pie too long... so, I could not press to sandwich. Gee...

One bite. Mmm Yummy!

Marshmallow
I have been wanted to make marshmallow for a long time.11pm Last night, I suddenly felt it's time to make marshmallow.
I got this coconut essence from my co-worker, Stephanie.

These are the first marshmallow I made from scratch. It wasn't difficult to make that much, but I made a mess in my kitchen. I try to make more marshmallows with different flavors. Also, I want to make whoopie pies with marshmallows. It should be good!  

Yogurt Scone
I baked them for tomorrow's lunch. I'll bring some for my work :)


My friend got me a Hokkaido Milk Jam(Mocha). It must be nice to eat with Scones!

Japanese Curry

I love Japanese Curry. It's easy and yummy. I usually just use pre-packed Curry mix blocks, but I added some spice that I really wanted to finish them all. Nutmeg, Coriander, Garam Masala, Paprika, Dried Japanese red perilla leaf were used this time. My Mom took all perilla leaf after we ate Umeboshi(Japanese plum pickles) , and dried and kept them in the bag. She never wasted foods, and she used and cooked many things which people usually trash such as radish leaf, carrot leaf and etc.(She was a great cook, and I admire her a lot.)
Since I got Staub pot, I always cook Curry with this pot. It can be reduced the time for cooking, and it makes food tender easily and nicely.

Icing Cookies
These are the gift for my friends. I baked so many cookies and drew Santa, Baby, Christmas ball.All my friends love my cookies, and I am happy they enjoyed my cookies.

PANDA,PanDa, PAndA!
I was back to my hometown during the new year's holidays. I wanted to bring something to my old friends, so I baked these cookies. I packed 7 or 8 panda cookies and the Christmas decoration cookies in a box and I brought these cookies when I met my friends while I was staying in my hometown. All my friends liked my cookies. Happy!




Gado Gado

While I was living in Seattle, I lived in a house for a couple months. The owner of the house is Kris and she loves cooking. She often cooks many unique dishes in the kitchen. One day, a good smell coming from the kitchen, Kris was cooking this Indonesian Peanut Sauce. I never had this one before, so I asked her to taste it. It was soooooo good, and I asked her for the recipe.
This is the recipe I got from her.
Usually, it cooks with peanut butter. I was thinking to go to the supermarket for getting it, but there is a large bag of leftover walnut(I got them when I baked snow ball cookies). So, I made walnut paste with the hand blender and use it for this sauce this time. Taste is a little bit different from the original one, but it tastes also good. Above pic is the pork saute with Gado Gado and the Gado Gado salad. It doesn't look good, because the sauce is brown ...hahaha :) 

Garlic Prawns
&
Mayonnaise Shrimp
I got a lots of prawns at the supermarket near my apt. I cooked two dishes, Spanish style "Garlic Shrimp" and Taiwanese dish"Mayonnaise Shrimp." Mayonnaise Shrimp is called "鳳梨蝦球" and it is usually eaten with pineapples. I knew I don't have pineapples, so I did not add them this time. Taiwanese(Chinese) mayo is sweet, so I added some condensed milk into Japanese mayo. I feel it tastes similar to Taiwanese mayo.


French Macarons

 

This is the first time to bake French Macarons. Red one is Rose and Yellow one is Citrus. I love Raduree's Rose Macrons a lot.(Raduree is a famous shop for Macarons in France) I sometimes buy few Macrons at Raduree, Ginza, but the price is pretty expensive. My Rose Macarons are pretty similar to Raduree. I don't need to buy them anymore! I'll bring these Macarons to my office tomorrow. I hope my team likes my snowball cookies I baked yesterday and these Macarons.


SnowBall Cookies

I baked cookies for my friend from Memphis :) The recipe from cookpad(Japanese recipe site) and it was very easy to make. Very crunchy and very sweet. I will bring them to my office on Monday. I am trying to make French Macarons tomorrow!  

Strawberry Cake


My auntie got the strawberries from a farm. The size is pretty big and the taste was so sweet. Baked the strawberry cake with a very rich heavy cream and a premium butter. Taste? It was amazing. I ate them with my friend after the dinner.
